Food premises get audited and the auditor wants paperwork: a site plan with numbered stations, dated service reports, what was found and what was done about it. That folder gets set up so an audit is a hand-over rather than a scramble. Programs run monthly or quarterly with the kitchen, dry store, bin area and loading dock as the pressure points.
The peninsula adds a seasonal shape most regions do not have. Cafes, pubs and holiday parks through Ocean Grove, Barwon Heads, Queenscliff and Portarlington go from quiet to flat out over a few weeks, and bin volume and foot traffic climb with it.
